Daisy Dysart’s Molasses Cookies (From Dysart’s Maine Family Files)
A cousin, Rebecca Close wrote this poem about these cookies. It says it all!
Molasses cookies! I can hardly wait!
I’d rush into the kitchen and I’d see ‘em on the rack,
Warm out of the oven, my very favorite snack.
I can smell ‘em in my memory, I can taste ‘em in my mind,
The very greatest treasure that any kid can find.
MOLASSES COOKIES!
1 cup Sugar
1 cup Shortening
1 cup Molasses
2 eggs
4 cups White Flour
2 teaspoons Soda
½ teaspoon Salt
¼ teaspoon Ginger
½ Allspice
¼ Cinnamon
Molasses is a thick, brown to deep black, honey-like substance. It was/is a staple in Maine Kitchens.
Cream together eggs, shortening, and sugar; add molasses and mix well. Add sifted dry ingredients, and mix well. Let batter rest about 30 minutes in refrigerator. Turn batter on a floured surface and roll 1/3 inch thick. Cut with a round cutter and bake at 350 for 12 minutes.
